Shanna Lucien

Since 2021, Shanna Lucien has coached Proof’s restaurant cohorts, specializing in P&L, operations, and HR. She’s supported Urban League groups in Atlanta, Los Angeles, Philadelphia, and Lake County. Formerly Popeyes’ Mountain West Regional Director of Operations, she led support for 100+ franchisees across 21 states/645 restaurants. A New Orleans native with roles at Copeland’s/Al Copeland/AFC, she’s active in local charities - the unofficial “Governor of New Orleans.”

Sondra Bertrand

Lead Coach

Sondra brings over 45 years of experience in foodservice, including 38 years at Popeyes. She began her career as a Regional Training Manager in New Orleans, led a 26-store conversion in Houston, designed brand training programs, and consulted with Midwest franchisees. Returning in 1999, she led Restaurant Support, wrote the “Finding Your 2%” profit manual, and later headed Brand Standards after RBI’s 2017 acquisition. Retired in 2023, she’s now semi-retired and sharing best practices with Proof Incubator.

Stan Stout has more than 25-Years of C-Level, leadership and consulting experience specializing in Multi-Brand Retail and Restaurant companies. His primary focus is leading brand growth, brand turnarounds and risk assessment/mitigation.
